Make and buy what you know you will eat. When I cook, I like to take portions of my meal and freeze it for a future meal. We call it a "tax". There are days that I am so happy I can just go to the freezer and turn our "tax" into a meal. Add a salad, some vegetables and some bread and bingo! Also, frozen meals, like lasagna's, periodically go on sale. Grab some up when the sales are on and freeze them.
My mom has been amazing about providing frozen food for us. She sends pies and loafs and mini muffins, etc. for the kid's school lunches. I love putting home-made treats in our foster kids lunches and I didn't even have to bake! Maybe there is someone in your life that wants to help or invest in your home and in your kids and they would love to help that way!
One time a dear friend gave me a special book about meal planning. Some friends got together and divided the work up. We had to plan, shop, measure, etc. and wrap several meals each. We took them home and froze them. It was so amazing! The food was delicious and so convenient. We all felt really good about having these delicious meals to serve to our families. I have a special cupboard for freezer dishes (either the aluminum ones from the dollar store or plastic ones with lids) this way they are handy when needed.
